Growing Information
Planting
- Sow seeds directly outdoors in early spring, as chives flourish in cool conditions.
- Plant seeds in well-drained soil and lightly cover them, keeping the surface consistently moist until germination.
- Space plants or thinned seedlings 8 to 12 inches apart to allow their mounded shape to mature properly.
- Chives generally take 75 to 85 days to reach maturity from seed, though light harvesting can begin earlier.
- Choose a location with full sun to partial shade to support strong, flavorful growth.
Maintenance
- Chives maintain a compact size, typically growing 10 to 12 inches tall with a similar spread.
- Remove spent flower heads to prevent self-seeding and to keep the plants producing fresh leaves.
- Water consistently, especially during hot periods, to maintain tender growth.
- Divide clumps every two to three years to rejuvenate the plants and encourage vigorous production.
Harvest & Storage
- Harvest chives once the plants reach 6 to 8 inches tall, snipping leaves from the outside of the clump to encourage regrowth.
- Cut only what you need for fresh use, as the tender leaves are best when eaten soon after harvesting.
- For short-term storage, keep harvested stems wrapped and refrigerated for several days.
