Growing Information
Planting
- Sow Chioggia beet seeds directly outdoors in early spring when soil temperatures reach at least 50°F.
- Plant seeds ½ inch deep in loose, well-drained soil enriched with organic matter for uniform root growth.
- Space rows 12–18 inches apart to provide adequate circulation and make harvesting easier.
- Seedlings emerge quickly in cool weather, and a second sowing can be made in late summer for a fall crop.
- Beets grow best in cool conditions and typically reach full maturity at a height of about 12–18 inches with a similar spread.
- Keep soil lightly moist during germination to support even sprouting and early vigor.
Maintenance
- Thin young seedlings early to a final spacing of about 3 inches to ensure proper root development.
- Keep soil consistently moist, as irregular watering can affect root shape and flavor quality.
- Mulch around plants to regulate soil temperature and reduce weed pressure.
- Remove competing weeds regularly to help the shallow roots access nutrients.
- Monitor for leaf miners and other pests, removing affected foliage as needed.
Harvest & Storage
- Chioggia beets mature in about 55 days, producing roots with a distinctive red-and-white bull’s-eye interior.
- Harvest when roots reach their ideal size, typically around 2–3 inches in diameter, to maintain sweetness and tenderness.
- Loosen soil gently and pull beets by the base of the greens to avoid bruising the roots.
- Store harvested beets in a cool, humid environment, removing most of the tops to extend shelf life.
- Cook or pickle promptly for the brightest color and best flavor retention.
