Emerald Giant Sweet Pepper delivers impressively large, thick-walled fruits with rich, juicy sweetness and no heat. First introduced in 1963, this heirloom variety produces vigorous plants with heavy harvests of 4.5" by 3.5" emerald-green peppers. Fruits can remain on the plant to ripen red for added sweetness. Adaptable to beds, containers, and greenhouses, it offers dependable productivity and excellent flavor throughout the season.

We ship to the Continental U.S. and Alaska only. We cannot ship to Hawaii, overseas U.S. military bases, or U.S. territories.

Growing Information

Planting

  • Start seeds indoors 8–10 weeks before the final frost date to ensure strong transplants for the garden.
  • Transplant outdoors once nighttime temperatures remain above 55°F and plants have acclimated through hardening-off.
  • Space plants 18–24 inches apart in rows set 24–36 inches apart to allow for airflow and mature spread.
  • Choose a location with full sun and well-drained, fertile soil to support rapid growth and fruit development.
  • Set transplants slightly deeper than they were in containers to promote strong root establishment.
  • Water thoroughly after planting and maintain even soil moisture during early growth.

Maintenance

  • Plants grow to an upright 26–30 inches tall with sturdy branching that supports heavy fruit loads.
  • Provide consistent moisture, especially during flowering and fruit set, while avoiding waterlogged soil.
  • Mulch around the base to help retain soil moisture and limit weed competition.
  • A balanced fertilizer or compost application supports vigorous growth and strong yields throughout the season.
  • Stake or cage plants in windy areas to keep branches from bending under the weight of large fruits.

Harvest & Storage

  • Harvest begins about 77 days after transplant, once peppers reach full size and deep emerald-green color.
  • Fruits typically measure 4.5 inches long and 3.5 inches wide, with thick, juicy walls ideal for fresh use or cooking.
  • Allow peppers to ripen further to red on the plant for maximum sweetness when conditions allow.
  • Handle harvested fruits gently to prevent bruising, and store unwashed in the refrigerator for up to one week.
  • For longer storage, peppers may be chopped and frozen without blanching.
