San Marzano tomatoes deliver the classic Italian flavor prized for rich sauces, canning, and slow roasting. These vigorous indeterminate plants produce long, slender fruits with dense flesh and minimal seed cavities, making them ideal for creating thick, velvety tomato paste. Introduced in 1926, this beloved heirloom remains a favorite for its dependable yields and traditional culinary character.

Growing Information

Planting

  • Start seeds indoors 6–8 weeks before the final frost date to ensure strong transplants.
  • Move seedlings outdoors after all danger of frost has passed and soil temperatures have warmed.
  • Plant in fertile, well-drained soil with full sun exposure to support vigorous growth.
  • Space plants 24–36 inches apart to accommodate their mature spread of roughly 18–24 inches.
  • Transplant deeply, burying part of the stem to encourage strong root development.
  • Water thoroughly after planting to help establish the root system in the first weeks.

Maintenance

  • Plants grow with an indeterminate habit and generally reach 60–72 inches tall with support.
  • Provide sturdy stakes or cages to manage the tall vines and encourage better air circulation.
  • Consistent watering helps maintain fruit quality and reduces the chance of blossom-end rot.
  • Mulching helps retain soil moisture and stabilize root-zone temperatures during hot weather.
  • Regular pruning of lower suckers can help concentrate energy and simplify maintenance.

Harvest & Storage

  • Fruits typically mature in about 85 days from transplanting.
  • The long, blocky tomatoes offer dense flesh with small seed cavities that reduce cooking time for paste.
  • Harvest when fruits turn deep red and feel firm for best flavor and texture.
  • Store freshly harvested tomatoes at room temperature and use promptly to maintain quality.
  • San Marzano tomatoes also dry well and can be preserved through canning or slow roasting.
